Cookery Courses

If you're enthusiastic about food and would like to learn more about the island's cuisine with a group of friends or family, we can offer cookery courses at rural restaurant and B&B Angelo & Arcangela - well-known in Gallura for the quality of its traditional food.  Chef-patron Angelo Antonaglia and his wife share their enthusiasm with visitors as they teach them how to prepare typically Sardinian dishes.

Courses take place in Spring and Autumn, with cookery sessions in the mornings from 10-12 followed by lunch allowing guests to enjoy the fruits of their morning’s lesson, then leaving them free to explore the island or head to the coast in the afternoon.  The 4 day courses can be tailored for the needs of your individual group (minimum 6 people), focusing on one or more courses or techniques each day, and typically encompass:

2 Secondo giorno… SALSE SARDE E NAZIONALI, FONDI DI COTTURA, VERDURE
3 Terzo giorno… CARNE BIANCHE E ROSSE
4 Quarto giorno... PESCI VARI, FRUTTI DI MARE - PREPARAZIONE E COTTURE

The key to Sardinian cuisine is the way it uses the indigenous ingredients of the mountains and coast, and for those who’d like to learn more about the food and its provenance trips can be arranged to explore the local area on foot and discover the local herbs and wild ingredients.

Sardinian Funghi
The climate and rugged terrain of northern Sardinia make it a paradise for mushroom lovers; it’s an especially rich area for a huge variety of funghi, and mushroom dishes are a speciality of Angelo & Arcangela in the autumn. During the mushroom season, Angelo leads mushroom forages for those who would like to learn to identify, prepare and taste the some of varieties which grow in the mountains and woods of the Gallura region.

If you’re interested in our Italian cookery courses or mushroom trips here in Sardinia, please contact us for more information. Cookery courses run during September, October, November, December, March and April and prices vary by date - MINIMUM GROUP SIZE 6 PEOPLE.
