Sardinia has its own very distinctive
style of cuisine, which evolved from the island’s
mountainous, sheep-rearing tradition and using the foods
which were available in the interior: wild herbs, lamb,
wild boar, honey, myrtle, olives, plus fish and shellfish
from the coast. Angelo & Arcangela specialize in this traditional cuisine in their restaurant, creating typical Sardinian dishes such as Gnocchetti Sardi, Zuppa Gallurese, Porcetto al mirto (pork with Mirto), Capretto con patate (kid with potatoes), Pesce alla Crosta di Sale (fish in salt) and Seadas (deep fried honey pastries).

Those who don’t eat meat or
fish will also be well looked after; there are many entirely vegetarian dishes based
on locally-grown vegetables. Dishes for those with special
diets can be created, including gluten-free.
The restaurant’s bread is home-baked
and its Mirto, Sardinia’s traditional liqueur made
from wild myrtle berries, is home-produced. Oil, honey and other products are selected from producers in the local area, and herbs gathered from the garden and mountainside macchia.

Mushroom foraging
A huge variety of mushrooms grow in the mountains and
hidden woods of northern Sardinia, and Angelo & Arcangela
is renowned on the island for its mushrooms dishes during
the autumn season. For those interested in learning
more, Angelo can run guided mushroom foraging trips.
Guests can join him on a trip into the woods and mountain
macchia where various types grow, dependent on season, weather and location, and can identify
and collect different species. Back in the kitchens they
can learn how to prepare them, cook them and eat together
around the wood fire.

If you'd like to get to know more about the very distinctive cuisine of Sardinia, and learn how to cook some of its traditional dishes, Angelo teaches courses at certain times of the year, and guests can join him in the kitchen to prepare a variety of dishes... then relax in the dining room and eat the results.
